Zucchini Cauliflower Salad
3 cups zucchini, unpeeled and diced
1/2 cup celery, diced
1/4 cup onion, diced
1/2 cup green pepper, diced
1/2 cup red pepper, diced
1 1/2 cup cauliflower, cut into small pieces
Dressing:
1/3 cup vegetable oil
2/3 cup vinegar
1/2 to 2/3 cup sugar
Salt and pepper to taste
Dash of Italian Seasoning (optional)
Combine all salad ingredients in large bowl and set aside. Prepare dressing by boiling all ingredients for 5 minutes, cool. Pour over vegetables, stir to coat. Chill 4 hours or overnight to blend flavors.
