White Chili
1 cup small white beans soaked and cooked or 19 oz can cannellini beans (white kidney beans)
1 cup Great Northern beans soaked, and cooked or 15 oz can Great Northern beans
6 cups chicken broth
1/2 C yellow onion chopped
3 to 4 half chicken breasts
2 small cans diced jalapeno chilies (one fireroasted if you want it REALLY hot)
1/4 tsp salt (omit if chicken bullion is used for broth)
1/4 tsp cayenne pepper
1/2 tsp cumin
1/2 tsp oregano (optional)
1/2 tsp coriander (optional)
1 C sour cream
Wash, soak and cook beans. Saute onion in large pot over medium heat. Add chicken broth and bring to a simmer. Add chicken breasts cut into bite sized pieces and cook until tender. Stir in beans, diced chili peppers, sour cream and spices. Simmer until beans are soft. Serve with grated cheese and tortilla chips.
