Simple Shortbread Cookies
1 Cup Butter
1/2 Cup Sugar
1 TSP vanilla
1/4 TSP Salt
2 Cups Flour
Cream the butter and sugar together. Mix in the vanilla and the salt, then mix in the flour. Chill in the refigerator. Roll the cookies out to your desired thickness, about 1/4" will do. Cut into shapes. Prick a few times with a fork, if you want them to bake nice and flat. Bake at 350F for about 10 min. Don't over bake!
You can also roll them into one inch balls, then press them down with your thumb. Fill up the hole with some good jam, then bake them. They are delicious that way too, and it is less work than rolling them out.
