Scandinavian Almond Cake
Beat well:
1-1/4 cup sugar
1 egg
1-1/2 tsp almond extract
2/3 cup milk
Add:
1-1/4 cup flour
1/2 tsp baking powder
Mix and then add:
1/2 cup melted margarine
Mix well.
Spray pan with cooking spray (Pam). Sprinkle sliced almonds on the bottom of cake pan before pouring in batter.
Bake at 350F for 40 to 50 minutes, or until wooden pick comes out dry. Edges must be golden brown. Cool in pan before removing. Cake will break if removed too soon. Sprinkle with powdered sugar.
Note: This cake is meant to be baked in a special half round, fluted loaf pan. I have to bake it longer than the suggested time to get the center cooked through.
