Rice Pudding
1 cup long grained rice
1 pint half and half
1 pint whole milk
1/2 tsp salt
1/2 cup sugar
Put rice, sugar and salt in top of double boiler. Cover rice with milk and half and half. Cook in double boiler for 2 hours. If too thick, add more milk. Sprinkle cinnamon on top before serving.
This recipe is from my father's aunt Marie Skarphol Lokke. (His mother's sister) When I was growing up, it was served and raved over at every family gathering.
