Quesadillas
1 serving
2 flour tortillas (8 inch diameter)
Butter or margarine
2 slices bacon, fried crisp
1 Tbsp chopped jalapeno peppers
1/4 fresh tomato, chopped
1/4 cup Colby or Cheddar cheese, shredded
Optional:
Guacamole
Sour cream
Picante sauce
Lightly butter tortilla and place buttered side down in pre-heated non-stick fry pan over medium heat. Sprinkle the bacon, peppers, tomato and cheese evenly over the shell. Place the second shell on top, buttered side up. Cook for 1 to 2 minutes until cheese starts to melt and then carefully flip quesadilla to other side to finish cooking. The quesadilla should be heated through and very lightly browned.
