Just like Mom made...

Potato Salad

Boil 16 Russet potatoes with the skin on; cool, peel and dice
1 medium Spanish onion
3-4 stalks celery
1 dozen hard boiled eggs, diced

Dressing:
2 eggs beaten
1 cup sugar
1 tsp salt
1/2 cup water
1/2 cup vinegar

Bring to boil and cool. Mixture thickens as it cools.

When cool add:

1 Tbls prepared mustard
1 pint Miracle Whip

Pour over potatoes and fold in. Make the day before to blend the flavor.
