Polverones (Mexican Peanutbutter Cookies)
1 cup powdered sugar
3/4 cup peanut butter
1/2 cup softened butter
1 cup flour
Blend with pastry blender until crumbly. Form into a log and refrigerate for 2 hours. Cut into pieces and roll into marble sized cookies about 1/2 inch diameter
Bake on ungreased cookie sheet at 350F for 15 minutes.
Leave on cookie sheet to cool. Coat with powdered sugar when cool.
