Pasta Salad with Sausage
4 cups noodles (rotini) cooked
1 cup salami, diced
2 tomatoes, peeled and chopped
1/3 cup olive oil
1/2 tsp dried basil or 2 Tbsp fresh chopped basil
3 Tbsp finely chopped parsley
2 Tbsp Parmesan cheese, grated
1/4 cup black olives, chopped
1 red pepper, pealed and chopped
2 cloves garlic, minced
1/4 cup pine nuts
1 jar marinated artichoke hearts, chopped
In a large bowl mix olive oil with basil and parsley. Add garlic and cheese and whisk thoroughly. Add warm noodles, tomatoes, olives, red pepper, pine nuts, artichoke hearts, salami. Toss well. Taste for salt and pepper and chill before serving.
