Pasta E Fagioli
1 lb ground beef, browned in olive oil
Small onion, chopped and browned (or 1-1/2 Tbsp Watkins onion soup mix)
2 stalks celery, chopped
2 large carrots, sliced
1 28 oz can diced tomatoes
1 15 oz can red kidney beans, drained and rinsed
1 15 oz can white kidney beans, drained and rinsed
1 32 oz box of Swanson's Beef Broth
2 cups water
2 tsp dried parsley
1 tsp oregano
1 tsp pepper
1/2 tsp Tabasco sauce
Salt to taste
2 cups pasta, uncooked, small size
Grated parmesan cheese
Saute ground beef in oil in large pot, until beef starts to brown. Add onions, carrots, celery and tomatoes. Simmer for about 10 minutes. Add beans, beef stock, water, onion soup mix, parsley, oregano, Tabasco sauce and pasta. Simmer until celery and carrots are tender about 45 minutes. Top each bowl with grated cheese when served.
