Just like Mom made...


Naan

2 cups flour
3/4 cup warm water (100F) 1 tablespoon sugar
1 teaspoon dry yeast
1 teaspoon salt
3 tablespoon plain yogurt
2 tablespoons olive oil
3 tablespoons melted butter

1. Mix together 1 cup flour, the sugar, the warm water, and the dry yeast. Cover and let rise for about an hour, or so, until it is bubbly.

2. Then, mix in the remaining ingredients. The dough should be sticky. Let it rise for about an hour, or so, until it has doubled in size.

3. After the dough has doubled in size, fold the dough in the bowl about 8 to 10 times. Let it rest for about 20 minutes.

4. Turn the dough out onto a floured counter. Cut into 8 pieces. Roll the pieces into balls, then let rest on the counter.

5. Using medium to high, heat up a flat cast iron pan. Lightly oil the pan with olive oil. Heat until almost smoking. Roll the dough out. Bake the dough on the cast iron pan.
