Lemon Pecan Bread
3/4 cup butter
1-1/2 cups sugar
3 eggs
2-1/4 cups flour
1/4 tsp baking soda
1/4 tsp salt
3/4 cup buttermilk
3/4 cup pecans, chopped
1 Tbsp lemon peel, grated
In large mixing bowl beat butter on medium speed until softened. Add sugar; beat until fluffy. Add eggs one at a time, beating well after each. Stir together flour, soda and salt and add to beaten mixture alternately with buttermilk. Beat well. Stir in pecans and lemon peel. Pour batter into two greased and floured 8 x 4 x 2 loaf pans. Bake at 350F for 1-1/4 hours. Cool ten minutes on wire rack before removing from pans.
