Lemon Cream Cheese Bread
Cream together:
1 1/4 cups sugar
1/2 cup shortening
Blend in:
2 eggs
Beat well.
Mix together:
2 1/4 cups flour
3 tsp baking powder
1 tsp salt
Add dry ingredients to alternately with:
3/4 cup evaporated milk
1/4 cup water
Blend thoroughly with mixer on low speed.
Fold in
1 cup ( 8 oz) cream cheese cut into 1/4 inch cubes
1/2 cup walnuts, chopped
2 Tbsp grated lemon rind.
Turn into two 8 x 4 loaf pans, greased and floured. Bake at 375F for 45-55 minutes.
Combine:
1/3 cup sugar
1/4 cup lemon juice
Brush over hot loaves.
Cool 30 minutes before removing from pans. Cool thoroughly before slicing.
