Icebox Cookies
Makes 6 dozen
2 cups brown sugar
1 cup shortening
2 eggs
1 tsp cream of tartar
1 tsp baking soda
1 tsp vanilla
3 cups flour
1/2 tsp salt
1 cup chopped nuts
Mix well. Sprinkle 1/2 cup flour on counter or board and shape dough into a long roll 2 inches in diameter. Chill, slice and bake at 350F degrees, 12-14 minutes.
This is an old recipe from Myrtle Rolstad's mother, Marie Shefland Teig (Great-great-grandma Teig). Back in those days they didn't have refrigerators, they had "ice boxes".
