Egg Nog Pie
1 pie shell, baked
Filling:
1 Tbsp gelatin
1 Tbsp cold water
1 cup milk
1/2 cup sugar
2 Tbsp cornstarch
1/2 tsp salt
3 egg yolks, beaten
1 Tbsp butter
1 tsp vanilla
1 cup whipping cream
Nutmeg
Soak gelatin in cold water. Scald milk in top of double boiler. Combine sugar, cornstarch and salt and mix well. Add to scalded milk and cook until thick and smooth.
Continue cooking 15 minutes longer. Stir small amount of mixture into beaten egg yolks and return to boiler and cook a few minutes longer. Add butter and gelatin. Cool. Add vanilla. Fold in whipped cream. Pour into baked pie shell. Sprinkle with nutmeg. Chill in refrigerator.
