Candied Yams or Sweet Potatoes
2 pounds sweet potatoes or yams (about 4-5 medium)
1/2 cup brown sugar
3 Tbsp butter or margarine
3 Tbsp light cream or milk
1/2 tsp salt
Cook unpeeled, washed potatoes or yams in boiling water until soft. Drain and cool enough to handle. Peel and cut into 1/2 inch slices.
In medium skillet, combine brown sugar, butter, cream and salt; cook over medium heat, stirring constantly, until smooth and bubbly. Add sweet potato slices; stir gently until glazed and heated through; or glaze and layer in casserole, cover, and put in warm oven (300F) to heat through until ready to serve. 4-6 servings.
