Oatmeal Bannocks
1 cup flour
1 tsp baking soda
1 tsp cream of tartar
1/2 tsp salt
1 cup quick oats
2 eggs
1 Tbsp honey
1-1/2 cups milk, warmed
Sift flour, baking soda and cream of tartar into a medium size bowl. Stir in salt and oatmeal.
Beat eggs, honey and milk in a small bowl. Make a well in the center of the dry ingredients and add the liquids. Beat until smooth. Grease griddle lightly; heat over low to medium heat. When griddle is hot, drop batter by spoonfuls without crowding. When bubbles form, turn and cook the other side for 2-3 minutes. Serve warm with butter and honey.
