Apricot Bread
1 cup dried apricots, cut fine
1 1/2 cup boiling water
1 1/2 cup sugar
1 Tbsp butter, melted
1 egg
1 tsp vanilla
3 cups flour
1/4 tsp salt
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1/2 cups nuts, chopped
Combine apricots and boiling water; let stand 1 hour. Drain off liquid and add to sugar, butter, egg and vanilla. Mix dry ingredients. Stir into liquid mixture. Add nuts and apricots.
Bake in two greased and floured, 1 pound loaf pans (7 3/8 x 3 5/8 x 2 1/4) at 350F for 1 hour until toothpick comes out dry.
